Default Mouthy chewy bite

Hi all, I have a 19 mth old Malinois/Dutch herder cross. He has plenty of prey drive and very little defence at this stage, I believe he is still a bit immature. I am new to working dogs and have recently re-joined a schutzhund club here in Northern Ireland. If I had of stayed with the club this issue probably would not have arisen.

Anyway ya gotta work with what you've got!! In my ignorance I have allowed a chewy grip to develop probably by outing to much when he was younger and continuing that thread. I have watched the Bernhard Flinks/Leerburg video's on focus, drive and grip training but it has left a few unanswered questions.

He is calming now by doing the "into my arms" and stroking his chest while pushing up on his lower jaw etc he will hold the tug/ball steady. What the video does not tell you is what do you after this?? Do I let the dog sit and hold the prey until he outs himself? I get a feeling this is not right either. Do I use 2 items and reward a firm grip with another item and start the whole process again?

I have taken advice from folk who I now know were wrong, they advised training the out when very young as it was easier to get the dog to out than to bite, DOH!!!

I am aware this is a very brief synopsis, if any further information is required for an informitive reply please ask and I will do my best to explain.
