Default Biting Location, technique

i was wondering opinions as to targeting in bitework .
i found this information on this site , this trainer prefers for his dogs to target the weapon hand and deliver mulitple bites not "bite and hold" as used by most i guess.
i can see why PSD dogs wouldn't utilize this technique because of liability issues but wondering if some persoanl protection trainers do? and would it be more effective , or just a higher risk to the handler?
