Default helper petting a dog after agitation

i have seen on this forum and on others where a helper agitates a dog and then after the dog is called off, the helper is asked to pet the dog as a way of proofing the dog or showing how safe the dog is when not under an attack command

i find these demonstrations very fascinating and hold these trainers in very high regard as i could never do anything remotely like that with my last dog (way to sharp for that)

but

i always felt that an effective protection dog should not look for affection from anyone outside his pack

and understood that having a helper pet a dog after agitation sent mixed messages and confuses the dog

wondering what you guys think
